Fall in Love with Apple Cinnamon Muffins

With the leaves falling and the air turning colder, we all can tell that fall is definitely here. What better way to celebrate one of the most beautiful times of the year than with a recipe straight from Mrs. Brill in the Culinary Department!


1 egg

3 tablespoons sugar

½ cup milk

¼ cup melted butter or margarine

1 ¼ cups flour

1 ½ teaspoons baking powder

Pinch of salt

½ teaspoon cinnamon

1 apple peeled, cored, and finely chopped

For Topping:

Mix 3 tablespoons sugar with 1 teaspoon cinnamon.

 Hint: Do not over mix – it should be lumpy.

 Preheat oven to 400 degrees Fahrenheit.

Use muffin tin with paper liners.

  1. In a large bowl, mix egg, sugar, milk, and melted butter.

  2. Stir in flour, baking powder, salt, and cinnamon just until flour is moistened.

  3. Stir in chopped apple and mix coarsely.

  4. Fill prepared muffin cups; sprinkle with cinnamon sugar topping.

  5. Bake for about 18-20 minutes, until golden brown. Immediately remove from pan.
